You can make delicious food while camping. In Hlane Royal National Park we decided to make something special like Melanzana di parmigiana. A dish that we also like to cook in The Netherlands. Everything that you need is a big fire and a Dutch oven. The ingredients are slightly simplified and therefore the name Melanzana á la Hlane.
1. Make a big fire
Use a lot of wood for the fire so you have enough hot coals that you can use.
2. Grilling the eggplant
Cut the eggplant into thin slices and grill them on the hot coals. Remove the eggplant from the heat if they are golden brown on both sides.
3. Stack
Fill the Dutch oven with a layer of tomato sauce. Then you put a layer of eggplant on top of it. Then sprinkle the cheese over it. Do this a number of times until you all the ingredients are used. We often use three layers.
4. Put the Dutch oven in the fire
Put the Dutch oven in the fire, directly on the coals. Also throw some coals on the lid of the pan to create heat all around the pan, just like an oven. After 15 minutes you can remove the Dutch oven from the heat. Be careful because the pan is really hot.
